What is Sustainability?
In 1987, the United Nations World Commission on Environment and Development (WCED) defined sustainability in their “Our Common Future” report as:
“that [which] meets the needs of the present without compromising the ability of future generations to meet their own needs.”
At Bon Appétit Management Company, we developed a definition of sustainability specific to food service:
Food choices that celebrate flavor, affirm regional cultural traditions, and support local communities without compromising air, water or soil, now and in the future.
